    P.S. thanks for your insight into the macaron making process. Mine looked pretty close to your failed batch. I'll have to try your recipe because I would like to turn out a successful batch. Oh, and I'm not sure what it means to age the egg whites... you mean leave them out of the fridge?

    Jacque: Thanks! Yes, keep your egg whites out at room temp for 2-3 days, this will age them and the excess water will evaporate. Some people recommend keeping them uncovered, but I've covered them (because I'm always worried that I'll knock something into them or spill them) and they seem to work fine. Good luck with your next batch! :)
